Traditional Balsamic Vinegar of Modena PDO is obtained from cooked grape must, matured by slow acetification resulting from a natural fermentation and a progressive concentration through a long aging.
It matures in small barrels built with different woods to infuse it with a great complexity of characteristics and aromas. At the twelfth year of aging it gives rise to the “Traditional”.
